CNY Recipe - A Bountiful Year Fish Fillet

Gibson has not shared recipe for quite a while, but he is in the mood of cooking due to the Chinese New Year being around the corner, hence he is here to share how to cook "A Bountiful Year Fish Fillet" in just an hour. The best part of the dish is that Pacific West has solved the hassle of preparing the fish, all we need to do is to cook the side dish and red sauce.

Since it is meant to be a CNY's dish, so Gibson will cook a "Oriental flavour Side" with Pacific West Tempura Fish Fillets, and served with spicy red sauce. However, if you don't fancy spiciness, you just skip the Chilli in the sauce recipe, which will turn it into sweet and sour sauce instead.

Side
Ingredients: a zucchini, a box of button mushroom, half a head of garlic
Seasoning: a dash of salt, black pepper, 2 tablespoons of Oyster Sauce



Diced the zucchini, button mushroom and Garlic. Heat the oil to sauté the garlic, then put in the button mushroom until it turn soft, followed by zucchini.



Add salt and black pepper to the ingredients, sauté until you notice the juice of the zucchini, then add Oyster Sauce. Sauté with high heat until almost dry.



Sauce
Ingredients: a yellow onion, a chilli, a can of whole peel tomato and 3 cloves of garlic.
Seasoning: 1 to 2 teaspoon of salt, 2 tablespoons of tomato Sauce and a tablespoons of Chilli Sauce



Diced the onion and chilli, sliced the garlic, Heat the oil to sauté the garlic and add onion till they turn soft, then put in a can of whole peel tomato.



Add seasoning and cook till done.



Gibson like the idea of the red sauce as the base of the fish fillet. Hence he used a hand blender to turn the sauce into puree.



Fish Fillet
There are 3 ways to reheat the fish fillet, so Gibson pick the easiest way, which is to reheat with an air fryer. Just less than 15 minutes, you get to serve a crispy hot fish fillet.



Just add in the side and sauce, "A Bountiful Year Fish Fillet" is all set to be served, even it is for a table of friends, this recipe will do well.
