=Penang= Putien, A Michelin star's Hokkien restaurant from Singapore @ Gurney Paragon

A Michelin One-starred restaurant -- Putien has finally opened its doors to Penang, which you can now find it at 6th Floor Gurney Paragon. A foreign Hokkien restaurant comes to Penang where Hokkien is the majority. A rather ambitious venture. However, they didn't let us down, as the taste of the dishes were interestingly familiar but with a different twist.

You will find sourness from the vinegar or saltiness from the infused spices in the dishes that are common to the Chinese flavour. If you would like to spice up the dishes, there is Putien's signature spice Mum chilli sauce to do the job, a taste similar to our Sambal Belacan, but much more sour and spicy, which enhances the taste of the dishes to a bolder character.

Most importantly they had sent their Penang's kitchen staffs for training prior to their grand opening in Penang, to ensure the consistency of the quality and taste of the dishes, so we will surely come back again to try out more.

Ah Yuan fragrant herbal chicken RM16.90
A country takes on comfort food, chicken is very slowly cooked in a soup of eight herbs, including fennel, cinnamon and angelica. The flavour of the herbs is distinct but not over-powering.

Seaweed and mini shrimps dressed with sauce RM15.90
To retain the best texture and nutrition of the seaweed, we use only 15cm-long top-grade seaweed that is harvested within 30 days after cultivation. Tossed with quality mini shrimps imported from the South China Sea region, every mouthful of this starter is a delightful and refreshing experience.

Iced bitter gourd RM11.90
Served chilled; the bitter gourd is crunchy and translucent-thin. Every slice is juicy and when dipped with honey, the taste is surprisingly refreshing!

Iced Nanri abalone RM33.90/pc
Putian is famed for its seafood – especially the most premium of seafood – abalone. Putian’s premium abalone retains its tenderness and size even after it’s cooked – making it a popular delicacy – a key ingredient in many local dishes.

Braised pig intestine RM19.90
12 inch-long intestines are meticulously chosen and tirelessly washed, looped, cooked, extended, selected and braised to perfection with our 12 spices house sauce. This intricate and complex method ensures that every bite of our ‘9 fold’ intestines gives you that springy texture that you love.

'100-second' stewed Yellow Croaker RM43.90
Yellow Croakers are commonly found in Taiwan Strait, best known for its tender and boneless texture. Specially flew in from its original habitat, the fresh Yellow Croaker is stewed with ginger precisely within 100 seconds, this light yet appetizing dish is a top choice for the healthy palates.

Putien Bian Rou soup (with vinegar) RM9.90
‘Bian Rou (Wanton) Soup’ is a Fujianese specialty with more than 500 years of history. At PUTIEN, we spare no efforts in keeping this precious craft originated in Chinese imperial dynasty of Qin. The delicate Fujian-style wonton wrapper is made of pork meat. Each time, 3 hours of continuously pounding and rolling on the meat paste is required before it becomes as thin as paper, making the handcrafted wanton springy and palatable with every bite.

Stir-fried yam (L) RM43.80
Using only the middle and best portion of the premium yam, these yam cubes are then skilfully fried to make up a savoury-sweet traditional offering with crisp golden exterior and light fluffiness within.

Deep-fried pork trotters with salt and pepper RM15.90/pc
Specifically using only 7-inch pig’s trotter from Australia, each trotter then goes through a 12-hour-long culinary method before being served. Sink your teeth into the crunchy skin as it gives way to tantalizing treat of collagen.

Spinach with salted & century egg in supreme stock RM21.90
The soft and tender chinese spinach is first stir-fried on high heat for flavor, then stewed in rich supreme-stock mix of century egg and salted egg to give it a burst of flavour.

Shredded pork with sesame bun RM7.90/pc Min. 2pcs
The tender shredded pork with sweet onions is wrapped with handmade golden sesame bun.

Putien Lor Mee RM14.90/pax
Silky Putian noodles with pork belly, prawn and clam braised in a luscious pork broth.

Fried Heng Hwa bee hoon RM21.90
PUTIEN Heng Hwa Bee Hoon is the only sundried vermicelli milled by hand in Putian. Unlike machine dried bee hoon, drying manually under the sun at the crack of dawn ensures that the bee hoon is translucent, silky, fine, chewy but not brittle. The rich, milky stock of pork bones and old hens cooked for hours and infused with 10 sumptuous ingredients add to the flavour of the bee hoon. Definitely one of our crowd favourites.

Putien sweet & sour pork with lychees RM22.90
Deep fried to light golden brown, the meat is tender and moist on the inside. The lychee is a perfect complement with its added burst of sweetness to the sauce.

Pumpkin cream with ice-cream RM9.90/pax
Cream of pumpkin with coconut ice-cream, further enlivened with blueberry sauce and grated peanuts for a delightful treat.
