Have been a while Gibson hasn't share recipe, so today let's try something unusual but simple, which is the Taishanese's dish - Stir-fry Glass Noodle that can served as main course or side dish to serve with steamed rice. The main ingredient for this dish are egg and Shiitake mushroom, but Gibson prefers to enhance the flavour by adding pork and prawn.

Preparation of ingredients:
▶Soak the glass noodle in the water
▶Pan-fried omelet then sliced
▶Boiled the pork in hot water then sliced
▶Sliced Shiitake mushroom, garlic and scallion
▶Peel and clean the prawn
Heat the wok to fry the garlic.
Add in prawn and pork then sprinkle some salt to flavour. Once done set aside.
Add in Shiitake mushroom to cook.
Add in glass noodle and Soy sauce to mix well. If frying for 2 persons, 2 tablespoons should be efficient.
Add in egg, pork and prawn then sprinkle some pepper before mix well.
Add in scallions then mix well.
Finally a plate of delicious glass noodle is ready to serve.
