We often assumed that Fine-Dine Banquet will not be able to serve delicious and hot food like how Chinese Banquet can achieve, which is true and false. The truth is that Gibson had experiencing some very bad banquet dinner himself, but the false is that you host the event at the wrong place, if the event is hosting at G Hotel, you will get the best taste of what western can do.

Gibson has been very fortunate to get invited to their Gball for quite some years, and the annual occasion is sort of their appreciation night for their clients and supporters. They are generously "showcasing" their ability of hosting Fine-Dine Banquet with a different theme each year, and the theme for 2019 is Blue.
With a new Executive Sous Chef, Jack Yap Soon Cheong recently joining the team, the menu has significantly added in fusion element, which are delicious and interesting at the same time.
The night started with 2 special cocktails, namely the Infinity and the Blue Affair.
Before the appetiser, they served bread and it was serving all night long.
Appetiser - Grilled scallops on puy lentil stew, torched melon salad, basil and pepper citrus cream.
Soup - Cream of zucchini and garbanzo velour with caramelised onion and aioli oil.
Palate Cleanser - Yuzu with mint oil.
Main Course - Oven roasted chicken, squid ink and basilica oil pasta with ratatouille and mushroom sauce.
Dessert - White chocolate lava cake with dark sweet cherries.
The dessert ended with a box of surprise that full of sweets and chocolates.
